Wyvern (飛竜 [hiryuu] or 'flying dragon' in Japanese) has been an actual companion pet only in Final Fantasy XI. However, the lore around several others state that Dragoons fight with wyverns. This page attempts to give all details related to companion wyverns.
Note that 'wind drake' is another name for wyverns in English (the term was used in FF5), while in FF11 what in English was called 'wyvern' (specifically referring to a dragoon's wyvern) was 子竜 [koryuu] or 'child dragon' instead. Both of these are presented on this page.

Wyverns can be summoned by Dragoons in Final Fantasy XI to fight by their side with the ability Call Wyvern. Each Dragoon gains their wyvern during the quest to unlock the job (The Holy Crest), and gets to name them by the end of it.
A wyvern chooses either offensive, defensive or mixed approach to battle depending on the current subjob of the dragoon who summons them, and their level rises with the level of the dragoon.
Naming the Wyvern
During the quest to unlock the Dragoon job you get a list of names to choose from for your wyvern. However, you are allowed to rename your wyvern for afterwards for a fee. To do so you must head to Norg and talk to Fouvia while on the Dragoon job. It will cost you 9,800 gil for each name change.

Wyvern in Battle
Wyverns count as a Dragon-type mob in that they can intimidate Demons in battle, and as having the Dragoon job in that they have passive traits corresponding to that job. Also, as mentioned previously, every time you summon your wyvern it takes upon itself one of the three below stances. Your current subjob determines which stance the wyvern takes.
The level of the wyvern is determined by the job level of the dragoon, up to level 99. Come level 99 however, the wyvern can still grow stronger. Past this barrier, its level is determined by the item level of the weapon equipped in the dragoon's main hand slot.

Offensive Stance
The offensive wyvern can cast elemental breaths, which activate whenever the dragoon uses a weaponskill. Their potency is affected by the wyvern's current HP, and accuracy may or may not be affected by their TP. Note that these can be Magic Bursted on.
Subjob: Warrior, Monk, Thief, Beastmaster, Ranger, Samurai, Corsair, Puppetmaster or Dancer

Defensive Stance
The defensive wyvern can use healing and status-removal breaths, which activate whenever the dragoon uses a weaponskill. Healing Breath's potency is affected by max HP and current TP, while Remove Breath gains more statuses it can remove through leveling up.
Subjob: White Mage, Black Mage, Red Mage, Summoner (Remove Breath only), Blue Mage, Scholar or Geomancer

Mixed Stance
The mixed wyvern will use elemental breaths when the dragoon uses a weaponskill, and Healing Breath when the dragoon casts a spell. Compared to the defensive wyvern, this one's Healing Breath is somewhat restricted as it will only be used on the dragoon and only if their HP is low enough.

Enhanced Parameters
Your wyvern's stats grow with the level of your dragoon. However, there is also another way to (temporarily) boost their strength, and that is by gaining experience/limit points. All of the bonuses gained will reset to 0 if you dismiss the wyvern, it is KO'd in battle, or you change areas.
